These blueberry hand pies have all the deliciousness of a blueberry pie but are so much easier to serve and share! And here’s the really great news — you can bake them in the oven or the air fryer! I love the air fryer, but if you don’t have one, the oven works just as well.
For the pie crust, you can use store-bought pie dough or make homemade. To create rectangular hand pies, roll the dough into a large rectangle. Then, use a pizza cutter to easily trim the dough and slice it into 4 small rectangles.
The filling is an irresistible mixture of blueberries, brown sugar, butter and vanilla, cooked until it forms a jam-like texture. Fortunately, the filling is ready in just 15 to 20 minutes and the flavor is incredible! You can also make the filling ahead and store in the fridge or freezer.
Be sure to brush the inner edge of the crust with egg wash to ensure a tight seal (otherwise filling will leak out), and then seal again with the tines of a fork. Then brush again with egg wash for a lovely golden finish! Looking for some other pies? These were the best air fryer hand pies. I had some homemade jam and used that. Perfect. Thanks for the recipe. Question; I want to make a pie with lattice, so could I use my jam for that?
Just found your Youtube channel and it’s wonderful. I made the blueberry hand pies yesterday and today I made them with a cherry filling, simply delicious. The crust was soooo flaky. I used a 4-inch rectangle cookie cutter to cut out 8 rectangles, and it worked fabulously. In the future I will be trying the apple hand pies, I’m sure they will turn out just as delicious.
