Marinated Grilled Chicken

You are going to love this recipe! We make this marinated grilled chicken at least once a week, and I often double the recipe so we have leftovers for lunch. The chicken comes out so flavorful, tender and juicy!

We love to enjoy this marinated grilled chicken on a big Greek Salad with a simple greek vinaigrette, or a Cobb Salad with avocado, hard boiled eggs, avocado, tomato, bacon and buttermilk blue cheese dressing. It’s also delicious as a grilled chicken sandwich, or served alongside your favorite sauce, like cilantro lime sauce, lemon dill sauce, sriracha mayo or chimichurri. For sides, try a green bean salad and no-knead bread.

The ingredients for the marinade are all fairly simple. I do recommend the white balsamic vinegar if you can find it at your grocery, but in a pinch feel free to use another vinegar (like apple cider, champagne or red wine vinegar) or lemon juice. The acid helps tenderize the chicken, in addition to adding great flavor, of course!

Marinated Grilled Chicken

Ingredients

1 Tablespoon Dijon mustard

1 Tablespoon Hellmann’s Mayonnaise

3 Tablespoons white balsamic vinegar

1/3 cup extra virgin olive oil

1 large clove garlic, minced

5 leaves basil, finely chopped

1 teaspoon agave (or granulated sugar)

Salt and pepper

4 boneless, skinless chicken breasts (about 1.5 pounds)

Instructions

  1. In the bottom of a large Ziploc bag, mix together all the ingredients for the marinade (Dijon mustard, Hellmann’s mayonnaise, white balsamic vinegar, olive oil, garlic, basil, agave, salt and pepper). Add chicken to the bag, turning breasts a few times to coat each one. Seal bag and refrigerate for 2 (or up to 24) hours.
  2. Prepare grill for medium-high heat; lightly oil grate. Grill chicken, turning halfway through, until nicely browned and cooked through, about 10-12 minutes. Transfer to a platter and let rest 5 minutes.
