Super Fast No-Knead Bread

This may be my favorite recipe ever. I’m so in awe of the fact that you can mix together a few simple ingredients (flour, yeast, salt, water), sit on the couch for four hours, and then bake up the most incredible soft, delicious warm loaf of bread you’ve ever had.

The key to super-fast no-knead bread is to use Instant Yeast (also called “Bread Machine Yeast”). When you mix that with very warm water, the yeast activates and rises in just four hours. Traditional Yeast will also work — just be prepared to wait eight to ten hours before baking instead of four to six.

As you get more comfortable with this recipe, you can get creative with add-ins. We love to add a tablespoon of maple syrup and melted butter or olive oil. I haven’t tried savory add-ins yet, but can imagine some delicious combinations!

Hope you get to try this one! It’s a great one to make with kids — they’ll enjoy the simple measuring, seeing how to the dough rises over time, and then, of course, enjoying a warm slice!

Super Fast No-Knead Bread

Ingredients

3 cups bread flour (or all-purpose flour)

1 teaspoon Instant Yeast

1 ½ teaspoons salt

1 ¼ cups very warm water, plus 1-2 Tablespoons more if needed

Olive oil, for the bowl

Instructions

Instructions:

  1. Place the flour, yeast and salt in a medium bowl. Stir to combine. Add very warm water. Stir until the ingredients come together in a sticky ball of dough. If dough is too dry and flour remains in the bottom of the bowl, add a little more water, just until the dough comes together.
  2. Using a clean medium-sized bowl, drizzle olive oil around the sides and bottom. Transfer dough to bowl, and turn the dough over a few times so that all sides are covered with oil. Cover with a clean dish towel and place bowl in a warm place. Let dough rise for 4-6 hours, or up to 24 hours.
  3. When you are ready to bake the bread, line a baking sheet with parchment paper. Remove kitchen towel from bowl. Use your fingers to pull the dough away from sides of the bowl. When the dough is completely released, shape the dough into a ball and place it on the parchment paper. Let rise again for 30 minutes.
  4. Preheat oven to 400 degrees F. Bake bread for 40 minutes, or until nicely browned. Let cool 10-15 minutes before serving.
