Texas Caviar

Texas Caviar is having a moment! After going viral on TikTok and Instagram, people are eager to give this fresh, party-friendly recipe a try!

Texas Caviar (or Cowboy Caviar) was originally created by renowned chef Helen Corbitt. As the story goes, she was asked by her employer, Neiman Marcus, to create a menu using only Texas products, including black eyed peas.

According to Texas Monthly, Corbitt was “[a]t a loss for an acceptable recipe starring the peas that she admittedly didn’t like, [so] she decided to pickle them in oil and vinegar with garlic and onions and unwittingly produced what would become one of her most well-known creations.”

Today there are many versions of Texas Caviar, each with its own variety of vegetables, including bell pepper, jalapeños, tomatoes, red onion, corn and even avocados. Doused in vinaigrette and served with crisp tortilla chips, Texas Caviar is a favorite for potlucks and tailgating, or just enjoying with some friends and a bucket of cold beer.

Texas Caviar

Ingredients

  • 1 (15.5 oz.) can black eyed peas, drained and rinsed
  • 1 (15.5 oz.) can black beans, drained and rinsed
  • 1 (15.25 oz.) can yellow corn, drained and rinsed
  • 1 red bell pepper, diced
  • 1-2 jalapenos, seeded and diced
  • ½ medium red onion, diced
  • 1 cup diced cherry tomatoes (about 20)
  • ½ cup cilantro leaves, chopped
  • 1 cup vinaigrette of choice
  • Salt and pepper, to taste
  • 1 green onion, chopped for garnish

 

Tortilla chips, for serving

Instructions

  1. Place black eyed peas, black beans, corn, bell pepper, jalapenos, red onion, tomatoes, and cilantro in a large bowl. Add vinaigrette, season with salt and pepper, and toss to combine. Let marinate at least 30 minutes before serving. (Refrigerate if longer.)
  2. Just before serving, garnish with green onions and serve with tortilla chips.
