Peanut Butter Cookies

These Peanut Butter Cookies are so easy! The most basic recipe just uses three ingredients (peanut butter, powdered sugar, and an egg) but I like to add chocolate chips and a splash of vanilla. With so few ingredients and just 10 minutes in the oven, these are one of our favorite treats!

For the peanut butter, I use a no-stir creamy brand like H-E-B or Jiff. You can mix in half crunchy if you like more texture. You could also sub in almond butter, but as almond butter can be drier than peanut butter, the cookies may be a bit dry. I haven’t tried cashew butter but it’s on my list!

Chocolate chips are optional. Use milk chocolate for extra sweetness, or dark chocolate for more depth. If you’re looking to reduce the sugar, try a brand like Lilly’s, sweetened with stevia. For a dairy-free option, try the Enjoy Life brand. And wouldn’t Mini M&M’s be so festive for a special occasion?

Instructions

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together egg, sugar and vanilla. Add peanut butter and stir until combined. Add chocolate chips and stir again.
  3. Using your hands, roll dough into tablespoon-sized balls. Place on the parchment-lined baking sheet about 2″ apart. Gently press the tops of each ball with a fork to form a crosshatch. Top with a few flakes of sea salt if desired.
  4. Bake cookies for 10 minutes. Let cookies cool on baking sheet for a few minutes, then transfer to a wire rack and cool completely.
