Jeannie’s Banana Cake is my new favorite cake! With fresh white icing and rich banana flavor, it’s a classic cake for any occasion.
This cake is named after my grandmother, Jeannie. When I was young, she would make a banana cake for me every year on my birthday. She would bring it over in a little square pan with a thick layer of cream cheese frosting on top. I always looked forward to it . . . licking the frosting off the bottoms of the candles, then diving into the soft, sweet cake.
For years, I tried to recreate Jeannie’s recipe but mine always turned out dry or bland. Not anymore. Now, I’ve finally come up with a recipe that Jeannie would love! And I know you will, too!
We mix the cake batter and frosting in our Kitchen-Aid stand mixer, but feel free to use a bowl and electric beaters instead. For baking and serving, we keep things simple with a 9×13″ baking pan.
