My husband hates cauliflower but he loves this cauliflower rice! It’s like a warm hug in a bowl and you can feel good about eating it. Unlike some other comfort foods, this one is low in carbs, high in fiber and packed with nutrients, including vitamin C, vitamin B, vitamin K, magnesium and iron.
Like many of my recipes, this one is simple. Just a few main ingredients (cauliflower, mushrooms and spinach) that you can dress up as little or as much as you want. For more flavor, feel free to sauté some sliced onion (before adding the cauliflower) or minced garlic (after cooking the cauliflower), or simply use a pinch of onion or garlic powder. Cheese would also be delicious … grated parmesan for a mild nutty flavor, or gouda for a creamy punch. If you like things spicy, sprinkle in some red pepper flakes.
My favorite riced cauliflower is from Trader Joe’s. If you don’t have a TJ’s in your area, look for fresh, riced cauliflower that is in small bits rather that larger cubes. The larger cubes will work but I prefer the texture of the smaller bits.
