Air Fryer Sweet Potatoes

Air Fryer Sweet Potatoes

Air Fryer Sweet Potatoes are such a great side dish, addition to a buddha bowl, or topping for a salad! They sweet potatoes cook up in the air fryer in just 12-15 minutes, with virtually no mess or clean up.

Do you have an air fryer yet? It is my absolute favorite kitchen gadget. I use it for everything from heating up leftovers, making French fries, “hard-boiling” eggs, roasting veggies, cooking bacon and even searing steak! The model I have (and love) is the Cosori Air Fryer Max XL 5.8 QT in Creamy White. If you have a different air fryer though, not to worry! In my recipes, I’ll always give you the exact time and temp settings, so you don’t have to worry about having the Cosori pre-sets.

For a demonstration of several of my most popular air fryer recipes, check out this YouTube video. And then let me know if you have any questions! I’d love to help 🙂

For serving, these sweet potatoes are delicious with my Cilantro Lime Sauce.

Air Fryer Sweet Potatoes

Ingredients

2 sweet potatoes, cubed

2 Tablespoons extra virgin olive oil

Salt & Pepper, to taste

For serving, Cilantro Lime Sauce

Instructions

  1. Place the cubes of sweet potato in a bowl and toss with olive oil, salt and pepper. Place half the cubes in the basket of an air fryer and cook at 400 degrees F for 12-15 minutes, shaking the basket halfway through.
  2. Transfer to a serving bowl and repeat with second remaining potatoes. After cooking the second batch of potatoes, transfer to the serving bowl and season with additional salt if needed. Serve warm.
