For years, I relied on bottled Caesar salad dressing but it was never very satisfying. And when I looked at making Caesar dressing from scratch, most of the recipes required a raw egg yolk, which is a little too adventurous for my home cooking. Finally, I’ve come up with a dressing — without raw eggs — that’s a family favorite and one I’m sure you’ll enjoy, too.
The dressing is so easy to make — just one bowl and a spoon is all you need. And except for the anchovy paste, the ingredients are fairly standard.
Anchovy paste comes in a tube (like toothpaste, except anchovies!) and is available at most grocery stores. Check the aisle with pasta, tomato sauces and pesto. Tubes of anchovy paste are usually next to the tubes of tomato paste, both in narrow rectangular boxes. I like to keep an extra box of anchovy paste and tomato paste in the pantry; both are great for adding flavor and umami with very little effort.
We love this Caesar salad dressing with chopped romaine lettuce and big crispy croutons. But it’s also delicious as a dip for roasted veggies, like broccoli, cauliflower or Brussels sprouts. So keep a bowl of dressing in the fridge and pull it out when you need a quick side for grilled chicken or seared salmon! I can’t wait to hear how you enjoy it!
