Epic French Toast

If you’re a parent and you’re not making this Epic French Toast with your kids, you are missing out! Although I do have a special place in my heart for Saturday Morning Pancakes, French toast is much easier to make and just as tasty!

The main ingredient is thick-sliced bread. You’re aiming for about 3/4-inch thick. Trader Joe’s has a wonderful thick-sliced cinnamon swirl bread that we love to use. If you don’t have a TJ’s, other options include Texas toast or thick-sliced brioche or challah. Slightly stale bread is even better, but fresh will work as well.

Beyond the bread, it’s just half-and-half, a couple eggs, splash of vanilla and pinch of cinnamon. Keep those in your fridge on the regular and you’ll be ready to whip up this Epic French Toast any ol’ time! For serving, try maple syrup and butter, or powdered sugar and strawberries, or if you’re feeling decadent, a swirl of sweetened whipped cream!

Epic French Toast

Ingredients

  • 1 1/3 cup half-and-half
  • 2 large eggs
  • 1/2 teaspoon vanilla
  • Pinch of cinnamon, if desired
  • 8 pieces thick-sliced bread
  • Butter for the pan

 

For serving: maple syrup and butter; powdered sugar or whipped cream; fresh fruit

 

Instructions

  1. In a pie plate or shallow bowl, mix together the half-and-half, eggs, vanilla and cinnamon until well combined.
  2. Melt a pat of butter in a non-stick or cast-iron pan or griddle over medium heat.
  3. Working with one piece of bread at a time, dip a slice of bread in the egg-custard mixture and let it soak for a few seconds, then flip the bread and soak the other side. Then pick up the bread, letting any excess egg drain off, and place it in the hot pan. Cook the first side until golden brown, about 3 minutes. Flip and cook the other side until golden brown, about 3-4 minutes more.
  4. Serve warm with maple syrup and butter, powdered sugar and fruit, or whipped cream.
