When we need a quick, warm dinner, I always turn to this recipe for Sloppy Joes. The whole family loves them, and maybe more importantly, they’re a cinch to make! Just one pan and a handful of ingredients are all you need.
For the filling, we use chopped onion and bell pepper, lean ground beef, and our favorite tangy BBQ sauce. (If you’re trying to reduce sugar, there are several sauce options made without sugar.) To elevate the flavor, I also like to add a generous pinch of Garam Masala, a mix of spices common in Indian cuisine. You can make the filling for Sloppy Joes up to 2 days ahead, and it freezes well, too!
For serving, homemade buns are incredible if you have the time, but store-bought brioche or burger buns are also great options. (Keep a bag in your freezer for last-minute meals.) For a lower carb dish, try serving the filling in iceberg or Bibb lettuce leaves. That cool, crisp lettuce is a delicious compliment to the warm, savory filling.
