A rustic fruit tart (or fruit galette) is a bit like a pie but easier to make! With warm fruit in the center and a tender, flakey crust, this dessert is a real stunner.
I use self rising flour in this recipe because it includes baking powder (which gives the crust a little extra lift) and because it has a low protein content (which gives the crust an extra tender crumb). If you don’t have self rising flour, use all purpose flour and simply add in the baking powder. If you don’t have all purpose flour, use all self rising flour. The results may vary a bit, but will still be delicious.
For the fruit, I use peaches and blackberries. But feel free to swap those out with apricots and blueberries, or plums and raspberries, or whatever other combination is in season.

Wow, wow, wow, I am soooooo impressed with this my 1st of baking many of your recipes for sure. I intended to sell this in my little tearoom style cafe but it did not make it. I did manage to get the Nectarine and Blueberry one down. I have chilling ready to bake an Apple Pie and a blind bake crust for the Key Lime Pie. I am super excited.
