If you’re looking for a new way to enjoy broccoli, this Marinated Broccoli Salad is it! With olives, mushrooms, cucumbers, tomatoes, onions and a delicious vinaigrette, each bite is bursting with flavor!
The best thing about this salad is that it’s easy to make. Simply steam the broccoli florets (I buy them pre-cut in a bag), cut up the remaining veggies and whisk the vinaigrette. Then toss it all together, let it marinate for 10 minutes or more, and serve!
This recipe for Marinated Broccoli Salad is flexible, too. If you happen to be out of one veggie, feel free to sub-in another. Garbanzo beans, red bell peppers or artichoke hearts would all be delicious!
