Red Rice with Peas

This recipe for red rice with peas has been a family favorite since my kids were young. The rice is flavorful, colorful, and so easy to make! You won’t even need a knife or cutting board.

For the rice, I use Royal Basmati rice and buy it in bulk on Amazon. Royal basmati rice is a long-grain white rice grown in India. Studies have shown that rice grown in India contains less arsenic than rice grown in the U.S., so I avoid domestically-grown rice for my family when possible.

For the peas, I prefer frozen petite green peas. Petite green peas have a sweeter flavor and better texture than standard green peas, so I always have a bag of petite green peas in my freezer.

Red Rice with Peas

Ingredients

  • 3 Tablespoons extra virgin olive oil (or clarified butter)
  • 1 clove garlic, peeled
  • 1 cup (190 g) Basmati rice
  • 1 teaspoon kosher salt
  • 1 Tablespoon (16 g) concentrated tomato paste
  • 1 cup (240 ml) water
  • 1 cup (240 ml) beef or chicken broth
  • 1 cup (70 g) frozen petite green peas

Instructions

  1. In a saucepan with tight-fitting lid, heat oil over medium heat. Add garlic and cook, flipping garlic occasionally to prevent burning, until lightly browned. Leaving garlic in the oil, add 1 cup rice and 1 teaspoon salt. With a wooden spoon, stir the rice in the hot oil until the rice turns a chalky white color.
  2. Add 1 Tablespoon tomato paste, 1 cup beef broth, and 1 cup water. Stir until tomato paste is dissolved. Increase heat to high and bring to boil. Then immediately reduce heat to low, cover with lid, and simmer on low for 15 minutes. Quickly open lid, add frozen green peas, and replace lid. Continue cooking 5 minutes. Off heat, fluff rice with a fork, and remove and discard garlic. Serve warm.
